Removing thinset on drywall.?

Returning to our kitchen I have started taking the old backsplash down. There obvisouly a lot of thinset stuck in the drywall. I was going to cut that part and replace the plasterboard, but I realize the new cabinets are taller in height and covers much of the old backsplash was. So the plan now would be to scrape the surface of all the paper off the drywall, skimcoat, the first and take away. But, as I discovered that not only this material can be peeled off. I even tried steam is what helped a little. Any ideas on what you can use, in addition of regular scrapers? Could help the wall paper remover at all here? Beginging I think it will be easier to cut and replace it all together. Then I'd have to start the counter and base cabinet ahead of schedule and no longer have a kitchen. Thanks for the replies.

Thinset is a product cement base. It is gray? If so, it is best to cut the section and replace with new plasterboard. If the adhesive is brown, is putty. That can be removed with a heat gun and a stiff spatula. only the shell is heated and immediately. So there is no magic solution. Good luck.
